Happy Pancake Day! Here is an easy whole-grain pancakes recipe for you <3
Serves: 2-4
INGREDIENTS
- 1 tsp baking powder
- 1/2 cup buckwheat flour
- 1/2 whole-wheat pastry flour
- 1-2 tsp flaxseed meal
- 1 cup almond milk
- 1-2 tsp coconut oil
- Pinch of sea salt
- Fresh berries of your choice (blueberries, blackberries, raspberries, strawberries)
- Maple syrup
- Handful of almond flakes
METHOD
Mix the buckwheat flour, whole-wheat pastry flour, flaxseed meal, baking powder, and sea salt together in a mixing bowl.
Slowly stir in the almond milk, and whisk until the lumps disappear.
Heat a non-stick pan over medium heat, then add the coconut oil. Once the coconut oil is warm, add pancake batter into the pan.
Cook until the edges look dry and bubbles rising to the top (about 2-4 minutes). Then, flip and cook the other side until golden for about 2-3 minutes.
Serve the pancakes warm with maple syrup, a sprinkle of almond flakes & berries. Enjoy!
