This is one of my favourite recipes for breakfast. It is so easy to make, very healthy and tastes super yummy too! This warm baked oats dish will be perfect for cold mornings in this coming autumn and winter.

INGREDIENTS
2 ripe banana, (mash 1 and a half, slice half for topping)
1/2 cup rolled oats
Handful of blueberries (fresh or frozen)
Handful of strawberries (cut into half or quarters) (optional)
1/4 cup almond milk
2 teaspoon cinnamon
1 tablespoon honey/maple syrup (optional, depending on how ripe the banana is)
chia seeds (optional)
flaxseeds (optional)
sunflower or pumpkin seeds (optional)
pecan (optional)
INSTRUCTIONS
- Preheat oven to 350°F/180°C, fan setting.
- In a bowl, add rolled oats and pour hot water just to cover the oats and let it soak for about 5 minutes. (if you prefer it soft, add more water and let it soak for longer)
- Mash banana and mix it into the soaked oats. Then, add almond milk into the bowl. Let it soak for another 2 – 3 minutes.
- Pour the mix into the baking tray. Add blueberries, chia seeds, flax seeds, sunflower seeds, honey and cinnamon. Mix well.
- Decorate with blueberries, strawberries, sliced banana, crushed pecan, and cinnamon.
- Put the tray in the oven and bake for around 20 minutes.
- Let it cool for 5 minutes before serving. Serve with yogurt and add more sprinkle of cinnamon, if desired. Enjoy!
